Classic Haitian Recipes

1. Chokola Peyi (Traditional Haitian Hot Chocolate)

The quintessential showcase of pure full-fat cacao. Simmered with sweet spices and evaporated milk, it creates a thick, aromatic drink.

 

Ingredients:

  • ¼ cup (2 oz) 100% full-fat Haitian cocoa powder
  • 2 cups whole milk, water, or a 1:1 mix
  • 1 cinnamon stick & 2 star anise pods
  • ½ tsp ground nutmeg or grated lime zest
  • 1 tsp vanilla extract
  • Brown sugar, maple or sugar to taste
  • Pinch of salt

 

Instructions:

In a saucepan, bring the water/milk mixture to a simmer with the cinnamon stick, star anise, nutmeg, and lime zest for 5 minutes to infuse the spices.

 

Whisk in the Haitian cocoa powder until completely smooth, dissolved, and integrated with the liquid.

 

Stir in the, vanilla, and salt. Simmer gently on low heat for 10–15 minutes until visibly thickened.

 

Strain through a fine-mesh sieve (to catch whole spices), sweeten to taste, and serve hot.

 

2. Kremas Ak Chokola (Chocolate Coconut Kremas)

A dark, indulgent twist on the classic Haitian coconut holiday beverage.

 

Method:

Whisk the full-fat Haitian cocoa powder gently into warm condensed milk over low heat until fully dissolved and smooth.

 

Transfer to a blender and combine with coconut cream, nutmeg, cinnamon, almond extract, and fresh lime juice.

 

Blend in dark Haitian rum (such as Barbancourt) to taste.

 

Strain into a glass bottle and chill thoroughly. Serve poured over ice.
